- Preheat oven to 400 degrees.
- Line muffin pan with paper muffin liners.
- Soak Erewhon Instant Oatmeal in milk for 10 minutes.
- Add egg and oil to oatmeal mixture and mix well.
- Add dry ingredients to wet ingredients – mix only enough to moisten.
- Fill prepared muffin tins with mixture and bake for 12 to 15 minutes.
- Yield: 12 muffins.
