Ingredients
  • 1 egg white
  • ½ cup shredded coconut
  • 3 tablespoons honey
  • ¼ teaspoon almond extract
  • ¼ teaspoon vanilla extract
  • 24 sliced almonds
  • 1 cup Erewhon Corn Flakes, crushed


Directions
  • Preheat oven to 325 degrees, and butter cookie sheet.
  • Beat egg white until stiff.
  • Gradually beat in the honey until egg white is stiff and glossy.
  • Add almond and vanilla extracts.
  • Fold in coconut and crushed Erewhon Corn Flakes.
  • Drop by teaspoons onto cookie sheet and place a sliced almond on top.
  • Bake for 15 minutes.
  • Remove from cookie sheet and place onto cooling rack after baking.

  • Yield: Approximately 2 dozen.
