Crisp Macaroons - Gluten Free
These great tasting cookies, made from Erewhon Organic 100% Natural Corn Flakes, are a great way to combine natural ingredients and good taste! And for those who need to follow a gluten free diet Erewhon Corn Flakes are gluten free. Enjoy!
Ingredients
- 1 egg white
- ½ cup shredded coconut
- 3 tablespoons honey
- ¼ teaspoon almond extract
- ¼ teaspoon vanilla extract
- 24 sliced almonds
- 1 cup Erewhon Corn Flakes, crushed
Directions
- Preheat oven to 325 degrees, and butter cookie sheet.
- Beat egg white until stiff.
- Gradually beat in the honey until egg white is stiff and glossy.
- Add almond and vanilla extracts.
- Fold in coconut and crushed Erewhon Corn Flakes.
- Drop by teaspoons onto cookie sheet and place a sliced almond on top.
- Bake for 15 minutes.
- Remove from cookie sheet and place onto cooling rack after baking.
- Yield: Approximately 2 dozen.
